Variety: 100% Glera
Vineyards: located in the hilly terrain of San Pietro di Feletto, in the Conegliano and Valdobbiadene DOCG zone, at an altitude of about 220 metres.
Vinification: the grapes are harvested at the beginning of September. The first stage of fermentation takes place at controlled temperature with selected yeasts; the second stage is carried out later by the Charmat process, at low temperatures in pressure vessels, followed by maturation in bottles for about one month.
Characteristic: white sparkling wine of light yellow colour with green shades and a fine persistent pearl. It is elegant and harmonious, with fresh fruity aromas of quince, peach and cedar and a floral bouquet of wisteria and acacia. It is smooth and soft on the palate, with delicious notes of cirrus and a fresh aromatic aftertaste.
Composition: alcohol 11%; acid 5.70 g/l; pH 3.25; residual sugar 16 g/l; pressure at 20°C 5 atm.
Optimal storage: up to 18 months in a cool, dark, horizontal position
Recommended for: fish and white meat, also excellent as an aperitif
Served at a temperature of 6-8°C
